Description:
Hand trimmed stem ginger rhizomes (Zingiber officinale), cut to size and shape, dusted lightly in castor sugar. (Other sugar types available on request)
Processing:
Prepared from sound, fresh, young stem ginger. Washed to remove foreign matter. Cut to size and shape, preserved in heavy brine, SO2 and citric acid. Flushed in running water to remove brine & citric acid to specified levels. Cooked and stabilised in syrup. Drained and baked in oven to crystallize. Dusted with sugar Packed and metal detected (2.0 mm Fe/2.0 Non-Fe /3.0 mm Stainless Steel), weighed and stored at ambient.
Flavour :
Typical of crystallised stem ginger, spicy, sweet, with some citrus top notes. No off flavours or taints.
Texture:
Firm, with a crisp bite, not woody or fibrous (physical fibre max 10%)
